There are some combinations that just can’t be beat. You got your classic pairing of cheese and wine, hamburgers and french fries, and best of all, peanut butter and chocolate.
There’s something in that nutty and slightly salty peanut butter that perfectly compliments sweet chocolate and leaves me swooning and in the happiest of sugar comas.
So a little background behind this recipe. Growing up, I could not get enough of those packaged Reese’s peanut butter cups.
They’re everywhere you go just asking to be eaten and I can’t even tell you how many times I was able to convince my mom into buying me a package in the checkout line at the grocery store.
I even have been dating a guy who’s last name is ridiculously similar to “Reeses” for the last four years, so I’m probably subconsciously channeling my inner desires to be with a man made out of chocolate and peanut butter.
What can I say? The heart wants what the heart wants.
After all those years of peanut butter and chocolate consumption you think I’d be tired out, but nope! The passion is still going strong and some of my all-time favorite desserts revolve around the combination.
These bars satisfy any craving I could possibly have and have a delicious texture thanks to the oats and the creaminess of the peanut butter and sugar blend. Did I mention that super thick layer of chocolate that you spread on top?
That layer, my friends, is what dreams are made of.
When I made these, I just crossed my fingers and hoped for the best as I threw my ingredients into a single saucepan (less clean-up- woo!) and then pressed them into a baking dish to cool.
You can always tell when good things are on the horizon by the taste of the batter and these were no exception!
After spreading the melted chocolate on top and not-so-patiently letting them cool, I dug in and experienced pure peanut butter and chocolate bliss.
Since I’m living in a house with a big group of girls, I have plenty of willing taste-testers and we all gathered around the dish and cut slice after slice off.
I eventually had to cover them up and warn everyone to not touch the other half of the pan since I wanted to wait till the morning when the light was better for their photo shoot. Man oh man was it hard to leave them alone!
All throughout the night I kept on slipping down into the kitchen and cutting off small slivers to make the bars “more even”. Yeaahhh right. (Also, I can’t be the only one guilty of this!)
In the end I’m just glad that I had a few survivors left that made it to get their moment of glory in front of my camera, but they’re gonners. RIP delicious peanut butter chocolate bars. You will be missed.
One of the most beautiful things about this recipe is that they are so easy to make, fast (I’m talking like 15 minutes here, people), and you probably have all the ingredients sitting in your cupboards.
I say it’s time to save those poor ingredients from collecting dust and whip out a batch of these to share with your family and friends. Or just eat them all yourself. I promise I won’t tell.
- ½ cup unsalted butter
- ¼ cup white sugar
- ¾ cup brown sugar
- ¼ cup milk
- 1 tsp vanilla extract
- pinch of salt
- ½ cup peanut butter
- 3¼ cups oats
- 1 24 oz bag semi-sweet chocolate chips
- Melt the butter in a medium-sized saucepan.
- Add in the white sugar, brown sugar, milk, vanilla extract, and a pinch of salt on low heat. Bring to a low boil and stir in the peanut butter.
- Cook for 2-3 minutes on low heat, then stir in the oats. Cook for another 2 minutes or so, then spread the bars out in a 9x9 lightly greased baking dish.
- Immediately layer the chocolate chips on top, then place under the broiler for a minute or so until they are melted.
- Spread evenly and let cool.
