Summer is here, strawberries are in season, so how about this delicious instant Strawberry Banana Ice Cream. I’ve only just recently discovered ‘Nice Cream’ as it’s sometimes called and myself and my son are completely in love with it.
Making this instant ice cream simply involves blending frozen bananas into creamy ice cream like consistency with optional addition of different fruits or other flavorings.
If you haven’t tried making your own ice cream, this is absolutely the easiest and healthiest way to do it, especially if you have kids.
It will save you from buying all of those sugar loaded artificially colored ice creams and lollies during the summer months. Plus it’s an amazing way to use up all of those overripe bananas.

The bananas have to be completely ripe so they are sweet and once blended become very creamy. Peel them, slice into small chunks, pop into freezer bag and freeze preferably overnight.
To make this ice cream you will need a high powered blender or a good food processor, because you’ll be blending frozen banana pieces. For this reason I usually add little bit of soft fruit as I find it speeds up the blending process.
Sometimes couple of tablespoons of liquid like almond or coconut milk can help with the blending too. Start by pulsing the fruit, stopping to scrape the sides few times and then blend until you have smooth consistency.
This ice cream doesn’t need any extra sweeteners, but if you have a very sweet tooth, you can always add little bit of maple syrup or honey.

Some recipes for ‘Nice Cream’ use only frozen fruit and if you have already frozen fruit in your freezer, you can use that instead and add to the blender together with the bananas. Fruit that work well are mango, pineapple, peaches, blueberries, blackberries and raspberries.
You can start by making banana ice cream and then experiment with adding different fruit and flavors. It all depends on your taste and what you love. Some other flavors could be cinnamon, cacao and vanilla.
Finally top your ice cream with some sliced fresh fruit, flaked coconut, chocolate chunks, cacao nibs or your favorite ice cream toppings. Serve immediately or you can further freeze your ice cream for more firm consistency.
If you have leftovers, pop them into an airtight container and store them in freezer. Before serving leave at room temperature to slightly soften and mix until creamy. Enjoy!
- 2 large ripe bananas, frozen
- ½ cup strawberries
- few strawberries for topping
- Peel and slice bananas, place into freezer bag and freeze overnight.
- Wash and hull strawberries. If they are very large, cut into halves.
- Place frozen bananas into high speed blender or food processor, add strawberries and pulse few times.
- You might have to stop and scrape down the sides few times depending on the strength of your blender.
- Blend until smooth, stir in between if needed.
- Scoop into serving bowl, arrange few sliced strawberries on top and serve immediately.
