So there I was, with like 50 pounds of mashed potatoes leftover from one family dinner (typical me). Well, maybe it wasn’t quite 50 pounds, but pretty darn close, or at least it seemed like it … lol!

And even though I was drowning in mashed potatoes, I just couldn’t throw them away. I needed to find a new and delicious way to use them up and fast!

I already set aside enough for a couple of breakfasts, and now I really wanted to do something with them that you don’t see in your typical mashed potato leftovers!

You know, something unique, that you don’t see daily on the food-filled inter-webs!

Then BOOM~ it hit me..almost literally…  “BOMBS”…haha!

Yep … Bombs! Seasoned leftover mashed potatoes filled with cheese, coated in toasty bread crumbs and wrapped in bacon, fried into a crispy nugget that explodes flavor upon impact! And here we are!

Each crispy, bacon-wrapped Bomb is bursting with creamy, smooth mashed potatoes and dripping with melty cheese!

These are a one-of-a-kind appetizer or side dish that won’t soon be forgotten! Not only did everyone go completely crazy for these cheesy explosions of potato goodness, I literally had to make more!

I don’t think I’ve ever seen anything disappear so fast. Not to mention all the “Oooh’s and Ahh’s that were filling up the house! I saw some people grabbing 2 and 3 Bombs at a time..no shame at all!

Serve them warm, and the smell alone is intoxicating. Your self-control doesn’t stand a chance. In fact, just wear your best starchy clothes and call it a day! Start that “diet” tomorrow … there’s always tomorrow!

As long as all these Bombs are gone, you’ll be fine … lol! If you want to kick it up a notch or two, add in some chopped jalapeños, or green chile — the possibilities and varieties are endless!

Don’t be shy, stuff some sausage in there, or some seasoned ground beef! Anything you can think of only make these Bombs more of the BOMB!

Play around with the dips too. You can go for a spicy cheese dip, because, umm …CHEESE! Salsa would be great, or even some ranch dressing!

Whatever you do, be sure to make a giant batch, and way more than you think you’ll need because they ail be gone before you can say “Where did they all go?”

No one will be able to answer that question, because their mouths will be too full … but oh well! You know where they all went, and that’s a good thing. As long as you grabbed some for yourself!

Prepare to never throw away your leftover mashed potatoes again….in fact, you will find yourself making mashed potatoes just for these Bombs!

They will blow everyone away for sure! And have this recipe handy and ready to go, because no one will leave without it.

Mashed Potato Bacon Bombs Ingredients

Here is how to make it happen.

In a large bowl combine the mashed potatoes, egg, and S&P until well blended.

Grab a small scoop of the mashed potatoes and gently form it around a cheddar chunk.

Mashed Potatoes and Cheddar Chunk

Place the bread crumbs into a shallow bowl, and roll that baby evenly in the bread crumbs.

Bread Crumbs

Now wrap the Bomb with one slice of bacon and secure it with a toothpick or skewer.

Bacon Wraps

Place them one or two at a time into about 2″ of hot oil (350 degrees is best)

Fry them until they’re evenly golden on all sides.

Cooking Bacon Bombs

Let them drain on some paper towels.

Serve them with sour cream, and serve them warm so they explode!

Delicious mashed potato bacon bombs using leftover mashed potatoes.

Ingredients
  • 2 cups leftover and chilled Mashed Potatoes
  • Bacon..one slice per Bomb
  • 1 Egg
  • ½ cup Dry Bread Crumbs
  • Cheddar Cheese cut into 1″ chunks (one chunk per Bomb)
  • Salt and Pepper to taste
  • Skewers or toothpicks
  • Oil for frying~ I used Canola
  • Sour Cream and toppings for dipping
