Goat Cheese Wrapped Grape Bites

These Goat Cheese Wrapped Grape Bites are crunchy on the outside, creamy on the inside, and are bursting with juice! Perfect for your next fancy get together or as a simple healthy snack.

And while our spotlight ingredients are very rarely cheese, I just can’t seem to stay away. I love cheese, and goat cheese is no exception.

My true love for cheese really began after a five day attempt at veganism. I thought “Eh, this vegetarian thing is a piece of cake. Let’s kick it up a notch. Let’s go vegan.”

Five days later all I could think about was sinking my teeth into a big hunk of cheddar. And so began my infatuation cheese.

This love was only magnified upon moving to the Netherlands a few months ago. Among windmills, tulips, and wooden shoes, the Dutch are infamous for their cheeses.

In fact, one of the most stressed times I’ve seen my boyfriend, who I’ve dubbed the boyfriend-tulip-man, was when he came upon the realization that we were out of cheese on a Saturday morning, before any of the shops were open. Oh the misery.

One of my newer favorite cheese is goat’s cheese. The flavor can be a bit intense and can sometimes be hard to pair with other flavors.

But according to the boyfriend-tulip-man, the flavors and textures in these Goat Cheese Wrapped Grape Bites are spot on (and that means a lot coming from a Dutch person, who are notoriously brutally honest).

The tulip-man has this thing about balancing. Everything he cooks is an intentional balance of colors, sweet and salty, crunchy and soft, hot and cold, you get the deal.

And while I strive to find that balance, I don’t always think of it all. So when I got the seal of approval from his about these grape bites, I was instantly SO excited to share them with you!

You’ll need soft goat cheese, red or green seedless grapes (or both!), and pistachios. Get your workplace all set up. If your goat cheese is firm, smoosh it around with a form to get it nice and soft.

Thoroughly wash and dry the grapes. Run the pistachios through a food processor until they’re coarsely ground, then pour them into a dish. Put on some good music and get rolling.

It’s simple really. Mold a bit of goat cheese around each grape, rolling between your palms to get a nice, smooth finish. Then roll the goat cheese covered grape in the pistachios. Roll between your palms again to press the nuts into the cheese, then set on a serving plate.

If you’re making these for a party, I like to skewer them on a large toothpick between fresh, naked grapes. It helps people to understand what’s inside (and also looks super gorgeous!) And if you’re feeling extra fancy, drizzle with a touch of honey for a nice, golden sparkle.

But these are also great as a simple, healthy snack. With just 40 calories per bite and 2.5 grams of protein, it’s a light snack I could really get on board with.
