Sausage Vegetable Gnocchi Skillet

Serves: 4-6 servings
- 1 package Turkey Kielbasa Sausage, chopped into bite-sized pieces
- 24 oz. Garlic Tomato Sauce*
- 16oz. gnocchi
- 8oz. frozen (or fresh) corn
- 8oz. frozen (or fresh) peas
- 1 small red onion, chopped
- 10 oz. can diced tomatoes and peppers, drained
- 1 cup vegetable broth
- 1 tsp. olive oil
- 4 oz. mascarpone (or cream cheese)
- 1 tsp. smoked paprika
- 1 tsp. garlic powder
- 1 tsp. salt
- ½ tsp. pepper
- (optional) 5-6 basil leaves, sliced into ribbons
- Add olive oil to a large skillet and bring to medium-high heat.
- Add chopped sausage and onions to the skillet and sauté for 3-5 minutes or until onions become translucent and sausage has browned.
- Add broth slowly to de-glaze the pan and lower heat to medium.
- Stir in frozen/fresh vegetables and spices and bring to a low simmer for 2 minutes.
- Stir in mascarpone until combined. Add gnocchi, stirring to coat with sauce.
- After 2-3 minutes when gnocchi has absorbed liquid and become soft, stir in tomato sauce. Allow to cook on low for five minutes.
- Serve with fresh ribbons of basil.
