Sausage Vegetable Gnocchi Skillet

Ingredients
  • 1 package Turkey Kielbasa Sausage, chopped into bite-sized pieces
  • 24 oz. Garlic Tomato Sauce*
  • 16oz. gnocchi
  • 8oz. frozen (or fresh) corn
  • 8oz. frozen (or fresh) peas
  • 1 small red onion, chopped
  • 10 oz. can diced tomatoes and peppers, drained
  • 1 cup vegetable broth
  • 1 tsp. olive oil
  • 4 oz. mascarpone (or cream cheese)
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • ½ tsp. pepper
  • (optional) 5-6 basil leaves, sliced into ribbons
Instructions
  1. Add olive oil to a large skillet and bring to medium-high heat.
  2. Add chopped sausage and onions to the skillet and sauté for 3-5 minutes or until onions become translucent and sausage has browned.
  3. Add broth slowly to de-glaze the pan and lower heat to medium.
  4. Stir in frozen/fresh vegetables and spices and bring to a low simmer for 2 minutes.
  5. Stir in mascarpone until combined. Add gnocchi, stirring to coat with sauce.
  6. After 2-3 minutes when gnocchi has absorbed liquid and become soft, stir in tomato sauce. Allow to cook on low for five minutes.
  7. Serve with fresh ribbons of basil.
