Carrot Cake Overnight Oats

Serves: 1 serving
  • ½ cup rolled oats
  • ½ cup grated carrot
  • 2tbsp raisins
  • pinch of sea salt
  • ½tsp cinnamon
  • pinch of ground ginger
  • ½tbsp maple syrup
  • 1 cup almond milk
  • Topping:
  • chopped walnuts
  • flaked coconut
  1. Have mason jar or other lidded glass jar ready.
  2. Peel and finely grate 1 medium carrot. Set aside.
  3. Place oats, grated carrot, raisins, sea salt, cinnamon, ground ginger, maple syrup and almond milk into the jar and stir thoroughly until combined.
  4. Close the lid and place into the fridge overnight or for at least few hours to allow the oats to soften and the flavors to develop.
  5. Before serving chop few walnuts and sprinkle on top together with few coconut flakes.
  6. Enjoy right away for a delicious breakfast.
