Carrot Cake Overnight Oats

- ½ cup rolled oats
- ½ cup grated carrot
- 2tbsp raisins
- pinch of sea salt
- ½tsp cinnamon
- pinch of ground ginger
- ½tbsp maple syrup
- 1 cup almond milk
- Topping:
- chopped walnuts
- flaked coconut
- Have mason jar or other lidded glass jar ready.
- Peel and finely grate 1 medium carrot. Set aside.
- Place oats, grated carrot, raisins, sea salt, cinnamon, ground ginger, maple syrup and almond milk into the jar and stir thoroughly until combined.
- Close the lid and place into the fridge overnight or for at least few hours to allow the oats to soften and the flavors to develop.
- Before serving chop few walnuts and sprinkle on top together with few coconut flakes.
- Enjoy right away for a delicious breakfast.
