Mediterranean Quinoa Salad
 
 
Healthy, fresh and incredibly delicious Mediterranean style quinoa salad that's perfect for summer.

Serves: 6 servings
Ingredients
  • 1 cup uncooked quinoa
  • 1½ cups chickpeas (1 can)
  • 1 medium cucumber, chopped
  • 2 cups cherry tomatoes, halved
  • 1 medium red onion, chopped
  • 1 cup kalamata olives, chopped
  • 1 cup fresh parsley, chopped
  • sea salt
  • black pepper
  • ¼ cup olive oil
  • 1 lemon, juice
Instructions
  1. Measure 1 cup of quinoa, place into mesh strainer and rinse under plenty of running water. Place into medium pot and add 1½ cups of water. Bring to a boil and leave to simmer covered for about 15 minutes until all the water has evaporated. Take off the heat and leave to stand for 5 minutes with the lid on. Fluff up with a fork and place into mixing bowl. Leave to cool down.
  2. Drain chickpeas.
  3. Wash and chop cucumber and tomatoes.
  4. Peel and chop red onion.
  5. Remove pits from kalamata olives and roughly chop.
  6. Roughly chop parsley.
  7. Add everything to cooled quinoa and stir together.
  8. Season with sea salt and black pepper to taste.
  9. Drizzle with olive oil and lemon juice.
  10. Stir everything together and check for seasoning.
  11. Place into the fridge until ready to serve.
  12. Enjoy!
