Serves: 8
  • ¼ cup milk
  • 4 eggs
  • salt and pepper
  • 1 tsp chopped garlic
  • ½ cup chopped ham
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped yellow bell pepper
  • 1 8 oz can crescent dinner rolls
  • 1 cup Mexican blend cheese, separated
  • basil, optional
  1. In a medium sized bowl, whisk together the milk, eggs, and plenty of salt and pepper. Stir in the chopped garlic, ham, and bell peppers.
  2. In a large greased saucepan, cook the egg mixture until the eggs are just done. Set aside.
  3. On a parchment paper-lined baking sheet, unfold the crescent rolls and arrange them in a circle with the pointy side facing outwards and the insides slightly overlapping. Press the overlapping portions together.
  4. On the widest part of each piece of triangle dough, evenly layer the cooked egg mixture and ¾ cup of the cheese.
  5. Fold the pointy sides over the egg mixture and tuck it under the inside of the ring. Brush the dough with milk and sprinkle the remaining cheese on top.
  6. Bake for 20 minutes or until the dough is a golden brown.
  7. If desired, top with freshly chopped basil.
