Chunky Dark Chocolate Coconut Oat Cookies

  • 1 stick butter
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1½ tsp vanilla extract
  • ¾ cup flour
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • 1¼ cup oats
  • ½ cup chopped walnuts
  • ½ cup sweetened coconut flakes
  • ½ cup dark chocolate chips
  1. Preheat the oven to 350 degrees.
  2. In a mixer, cream the butter and sugars together until fluffy. Beat in the egg and vanilla extract.
  3. In a medium sized bowl, mix together the flour, baking powder, cinnamon, salt, and oats. Mix the dry mixture into the wet mixture until just combined.
  4. Stir in the walnuts, coconut flakes, and dark chocolate chips.
  5. Line a baking sheet with parchment paper and dollop a heaping tablespoon of dough per cookie. Bake for 8-10 minutes or until the cookies turn golden brown. Don't over-bake! They will finish cooking outside of the oven.
