Spicy Tomato Salsa

  • 4 roma tomatoes
  • 1 can diced tomatoes
  • ½ green pepper
  • ½ cup cilantro
  • 1 jalapeño pepper, seeds removed if you want it less spicy
  • ½ tsp oregano
  • ¼ tsp paprika
  • Juice from 1 lime
  • Salt and pepper to taste
  1. Place the roma tomatoes and the can of diced tomatoes into a food processor; pulse.
  2. Cut the jalapeño pepper length-ways and either remove the seeds if you want the salsa less spicy, or leave them in if you want it extra spicy; add this pepper, along with the green pepper, to the food processor and pulse.
  3. Add the rest of the ingredients to the food processor.
  4. Pour into a dish and place in the refrigerator for at least 30 minutes. The longer it sits the longer the flavors will absorb.
  5. Enjoy with your favorite tortilla chips!
