Double Chocolate Banana Granola

Ingredients
  • 1 medium ripe banana, mashed
  • 2 Tbsp. brown sugar
  • 2 Tbsp. maple syrup
  • 2 Tbsp. coconut oil, melted
  • 1 tsp. vanilla extract
  • ¼ tsp. salt
  • 2 cups old fashioned oats
  • 2 Tbsp. unsweetened cocoa powder
  • ⅓ cup chocolate chips
  • ¼ cup sunflower seeds
Instructions
  1. Preheat oven to 325F and spray a rimmed baking sheet with cooking spray or line it with parchment paper or a non-stick baking mat. Set aside.
  2. In a medium mixing bowl, combine mashed banana, brown sugar, maple syrup, coconut oil, vanilla, and salt, whisking until smooth.
  3. Remove from heat and add oats and cocoa powder, mixing well to ensure that all of the oats are well coated.
  4. Spread the granola mixture over a baking sheet, leaving as many clusters as you want. Bake for 25-30 minutes, stirring at the halfway point to prevent burning. When it begins to turn golden brown, remove from oven and let it cool completely before adding chocolate chips and sunflower seeds. Store in an airtight container.
