Garlic Parmesan Shrimp Quinoa

  • 1 cup dried quinoa
  • 2 cups water
  • 1 tbsp olive oil
  • 3 cloves garlic, diced
  • ½ cup onion, diced
  • ½ lb shrimp
  • ½ tsp dried Italian herbs
  • ½ cup cherry tomatoes, halved
  • ¼ cup parmesan cheese
  • salt and pepper for seasoning
  1. In a medium-sized pot, cook the quinoa according to the directions on the package. Once cooked, remove from the pot.
  2. Heat the olive oil on medium-high heat and cook the garlic for 30 seconds or until fragrant. Add in the onion and cook until translucent.
  3. Once the onion is cooked, add in the shrimp and season with salt, pepper, and the dried Italian herbs. Cook for 3-5 minutes or until no longer raw.
  4. Combine the shrimp mixture and quinoa. Mix in the cherry tomatoes, parmesan, and season to taste. Enjoy!
