Garlic Parmesan Shrimp Quinoa

- 1 cup dried quinoa
- 2 cups water
- 1 tbsp olive oil
- 3 cloves garlic, diced
- ½ cup onion, diced
- ½ lb shrimp
- ½ tsp dried Italian herbs
- ½ cup cherry tomatoes, halved
- ¼ cup parmesan cheese
- salt and pepper for seasoning
- In a medium-sized pot, cook the quinoa according to the directions on the package. Once cooked, remove from the pot.
- Heat the olive oil on medium-high heat and cook the garlic for 30 seconds or until fragrant. Add in the onion and cook until translucent.
- Once the onion is cooked, add in the shrimp and season with salt, pepper, and the dried Italian herbs. Cook for 3-5 minutes or until no longer raw.
- Combine the shrimp mixture and quinoa. Mix in the cherry tomatoes, parmesan, and season to taste. Enjoy!
