Easy Garlicky White Pizza

- 1 batch of your favorite pizza dough
- 1 tablespoon olive oil
- 3 garlic cloves, sliced very thin
- 2 cups shredded Gruyere cheese
- 2 cups shredded mozzarella cheese
- ¾ cup fresh ricotta cheese
- ¼ cup parmesan cheese, plus more for sprinkling
- Parsley and red pepper flakes for sprinkling
- Preheat oven to 550 degrees. Add pizza stone. Heat pizza stone for at least 20 minutes.
- Roll out pizza dough into a circle on a pizza wheel covered in cornmeal or plenty of flour (so the dough can easily slide on to the pizza stone)
- Brush with olive oil and sprinkle sliced garlic evenly across pizza dough. Sprinkle with salt and pepper.
- In a bowl combine mozzarella and Gruyere cheese. Sprinkle over pizza.
- Dollop with ricotta cheese.
- Slide onto pizza stone. Bake for 10-15 minutes or until the crust is crisp and cheese is brown and bubbly.
- Sprinkle with parmesan cheese, parsley and red pepper flakes.
