Ingredients
  • 1 batch of your favorite pizza dough
  • 1 tablespoon olive oil
  • 3 garlic cloves, sliced very thin
  • 2 cups shredded Gruyere cheese
  • 2 cups shredded mozzarella cheese
  • ¾ cup fresh ricotta cheese
  • ¼ cup parmesan cheese, plus more for sprinkling
  • Parsley and red pepper flakes for sprinkling
Instructions
  1. Preheat oven to 550 degrees. Add pizza stone. Heat pizza stone for at least 20 minutes.
  2. Roll out pizza dough into a circle on a pizza wheel covered in cornmeal or plenty of flour (so the dough can easily slide on to the pizza stone)
  3. Brush with olive oil and sprinkle sliced garlic evenly across pizza dough. Sprinkle with salt and pepper.
  4. In a bowl combine mozzarella and Gruyere cheese. Sprinkle over pizza.
  5. Dollop with ricotta cheese.
  6. Slide onto pizza stone. Bake for 10-15 minutes or until the crust is crisp and cheese is brown and bubbly.
  7. Sprinkle with parmesan cheese, parsley and red pepper flakes.
