Chocolate Chip Oatmeal Cookies (Made in Just 15 Minutes)

- 1 cup rolled oats (certified gluten free if necessary)
- ½ tsp baking soda
- pinch of salt
- 3½ tbsp maple syrup
- 1½ tbsp coconut oil, melted
- 2 tsp apple cider vinegar
- 2 tbsp dairy free chocolate chips + more for topping
- Preheat oven to 375F and line a baking sheet with parchment paper and set aside
- Add oats, baking soda and salt to a blender or food processor and blend until a powder-like consistency is reached
- Pour the into a mixing and stir in the maple syrup, coconut oil and apple cider vinegar
- Fold in the chocolate chips
- Spoon out balls of dough onto the baking sheet about an inch apart and bake for 8 minutes
- The cookies will be tender so leave them in the baking sheet for a couple minutes before moving them to a wire cooking rack to cool completely
