Chocolate Chip Oatmeal Cookies (Made in Just 15 Minutes)

  • 1 cup rolled oats (certified gluten free if necessary)
  • ½ tsp baking soda
  • pinch of salt
  • 3½ tbsp maple syrup
  • 1½ tbsp coconut oil, melted
  • 2 tsp apple cider vinegar
  • 2 tbsp dairy free chocolate chips + more for topping
  1. Preheat oven to 375F and line a baking sheet with parchment paper and set aside
  2. Add oats, baking soda and salt to a blender or food processor and blend until a powder-like consistency is reached
  3. Pour the into a mixing and stir in the maple syrup, coconut oil and apple cider vinegar
  4. Fold in the chocolate chips
  5. Spoon out balls of dough onto the baking sheet about an inch apart and bake for 8 minutes
  6. The cookies will be tender so leave them in the baking sheet for a couple minutes before moving them to a wire cooking rack to cool completely
