Peppermint Crunch Brownies

Ingredients
  • 1 stick unsalted butter
  • 1 cup white sugar
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • 3 eggs
  • ¼ cup non-fat, plain Greek yogurt
  • 1½ teaspoons vanilla
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 12-15 Andes Peppermint Crunch mints, unwrapped
Instructions
  1. Preheat oven to 350F. Spray an 8x8 baking pan with non-stick cooking spray. Set aside.
  2. In a medium saucepan, melt butter over medium heat.
  3. Once butter is completely melted, remove from heat and whisk in brown sugar, white sugar, and salt until smooth.
  4. Add in eggs, yogurt, and vanilla, whisking well until combined.
  5. Add in cocoa powder and flour, stirring until just combined.
  6. Pour batter into prepared pan and bake for 25-30 minutes or until middle is set and toothpick inserted into center comes out with a few crumbs.
  7. Remove brownies from oven and immediately place mints on top layer of brownies.
  8. Let sit for several minutes to melt the mints. Using a knife or spatula, swirl the mints to create a frosting, spreading it out in an even layer across brownies.
  9. Let cool completely in pan until frosting has hardened.
  10. Cut into bars and serve.
