Overnight Oats is such an easy, quick and delicious breakfast to prepare the night before to enjoy the next day. Imagine waking up to your breakfast already waiting for you in the fridge, no cooking needed. This is also the ultimate grab and go breakfast if you’re in a hurry.

Now Carrot Cake Overnight Oats is a real treat, it’s like eating pudding for breakfast and I promise you that it tastes like carrot cake. The oats are soft and gooey, the carrot gives it a wonderful crunch, raisins, ginger and cinnamon add sweetness. Overall it’s the ultimate most delicious healthy breakfast to wake up to and start your day.

Carrot Cake Overnight Oats

As the name suggests you have to prepare the oats the night before. You will need a lidded jar or container, mason jar type is perfect for this. Simply add your oats, grated carrot, raisins, spices and almond milk, give it a good stir and pop into the fridge overnight.

In the morning you can sprinkle your oats with few chopped walnuts and coconut flakes for an extra crunch and flavor. It’s the best to use plant based milk and I tend to use almond milk, but you can use any other type of plant milk that you like.

The topping is optional, but I think it adds that little bit of an extra something and makes it even more special. Using pecans instead of walnuts would also taste wonderful.

Carrot Cake Overnight Oats

Overnight oats can be made easily with so many different flavors and toppings. The carrot cake version is just one of the many you can experiment with.

If you like to try different version start with mixing plain oats with pinch of sea salt, maple syrup and almond milk and then experiment with adding other flavors to it. To make chocolate version stir in some raw cacao or cocoa powder.

For berry version top with any fresh berries of your choice, blueberries are fantastic. For banana version stir in some mashed banana in the morning with a sprinkle of cinnamon. Top with any nuts or seeds of your choice.

How about peach, mango or pineapple overnight oats? The choice is yours. Enjoy!

Ingredients
  • ½ cup rolled oats
  • ½ cup grated carrot
  • 2tbsp raisins
  • pinch of sea salt
  • ½tsp cinnamon
  • pinch of ground ginger
  • ½tbsp maple syrup
  • 1 cup almond milk
  • Topping:
  • chopped walnuts
  • flaked coconut
Instructions
  1. Have mason jar or other lidded glass jar ready.
  2. Peel and finely grate 1 medium carrot. Set aside.
  3. Place oats, grated carrot, raisins, sea salt, cinnamon, ground ginger, maple syrup and almond milk into the jar and stir thoroughly until combined.
  4. Close the lid and place into the fridge overnight or for at least few hours to allow the oats to soften and the flavors to develop.
  5. Before serving chop few walnuts and sprinkle on top together with few coconut flakes.
  6. Enjoy right away for a delicious breakfast.
