Growing up, I always loved eating ice cream as an after-dinner treat or snack before bed time. Although it wasn’t something I ate too often, I looked forward to having a dish of this creamy treat when the weather was hot or it was served alongside a piece of birthday cake.

My family and I would often walk to our local ice cream shop on warm summer evenings. My parents would let my brother and I chose whatever we wanted on the menu, knowing that we usually stuck to our normal favorites.

Ingredients
  • 8 cups popped popcorn
  • 10 ounces white chocolate chips or wafers
  • ¼ cup dry yellow cake mix
  • 3 tablespoons rainbow sprinkles
Instructions
  1. Line two baking pans with parchment paper. Set aside.
  2. Pour popcorn into a large bowl and set aside.
  3. In a medium bowl, melt chocolate chips until smooth, stirring every 15-20 seconds so it doesn't burn.
  4. Pour white chocolate and cake mix over popcorn and stir gently until fully combined.
  5. Gently fold in rainbow sprinkles.
  6. Pour popcorn onto lined baking pans and let set until hardened.
  7. Once popcorn is set, break into pieces and serve immediately or store in an airtight container.
  8. Enjoy!
