Coconut Cranberry Orange Granola

Ingredients
  • 2 cups rolled oats
  • 1 tbsp ground flax
  • 2 tsp ground cinnamon
  • ⅛ cup coconut oil, melted
  • ¼ cup applesauce
  • ⅛ cup maple syrup
  • 1 tsp orange extract
  • ½ cup dried cranberries
  • ¼ cup unsweetened coconut
Instructions
  1. Preheat oven to 350F. Line a baking sheet with parchment paper and set aside
  2. Mix together the rolled oats, ground flax and cinnamon
  3. In a small bowl, combined the melted coconut oil, applesauce, maple syrup and orange extract
  4. Pour the wet ingredients into the dry and mix well
  5. Spread the mixture evenly out onto the lined baking sheet and bake for 7 minutes
  6. Remove from the oven, stir in the cranberries and coconut and return to the oven for another 8 minutes or until the granola is golden brown
  7. Allow to cool completely in the baking sheet before storing in an airtight container
