Asian Chicken Salad

Ingredients
  • 1 large boneless skinless chicken breast
  • 2-3 teaspoons olive oil
  • Salt and Pepper
  • 1 package Asian blend chopped salad (Dole makes this)
  • 3 cups lettuce
  • ½ cup thinly sliced red bell pepper
  • ¼ cup sliced almonds
  • ¼ cup peanuts
  • ⅓ cup Wonton Strips
  • Optional: sesame seeds, extra cilantro
  • 4 tablespoons freshly squeezed lime juice
  • 2 tablespoons soy sauce
  • 3 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon minced garlic
  • ½ teaspoon chili powder
  • Salt and pepper
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon coconut milk
  • ¾ tablespoon soy sauce
  • ⅛ teaspoon minced garlic
  • 1 teaspoon brown sugar
  • 1 tablespoon fresh lime juice
Instructions
For the dressing:
  1. Combine the lime juice, soy sauce, olive oil, brown sugar, minced garlic, chili powder, salt, and pepper.
  2. Seal the jar tightly and shake until combined. Adjust seasonings to preference and then pour over the salad and toss to combine.
For the chicken peanut sauce:
  1. Combine the peanut butter, coconut milk, soy sauce, minced garlic, brown sugar, and lime juice in a blender or food processor. Blend until smooth, taste, adjust seasonings to preference.
  2. Lightly coat your skillet with 2 to 3 teaspoons olive oil.
  3. Preheat the skillet over medium-high heat until hot. Place the chicken in the skillet and then reduce the heat to medium and cook until the meat is no longer pink and the juices run clear, about 8 to 12 minutes.
  4. As the chicken cooks, turn it occasionally so it browns evenly. If it starts to brown too quickly, reduce the heat to medium-low. Once the chicken is finished, remove from heat and slice or chop it. Let it cool, toss it in the peanut sauce, sprinkle some sesame seeds on, and then add it to the salad.
  5. Remove the packaging for the Asian chopped salad and pour into a large bowl. Chop up the lettuce and toss with the chopped salad.
  6. Add in the red pepper (remove seeds and slice thinly), almonds, and peanuts.
  7. Add in additional cilantro and sesame seeds if desired. Toss the salad in the dressing and enjoy immediately.
