Blueberry Oatmeal Crumble Bars

Ingredients
  • 1 cup all-purpose flour
  • 1 cup old fashioned rolled oats
  • ½ cup dark brown sugar
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup butter, softened
  • ¾ cup blueberry jam
  • ¼ cup frozen blueberries
Instructions
  1. Preheat oven to 350F. Line an 8x8 baking pan with a sheet of aluminum foil, leaving a few inches of overhang on the sides to allow for easy removal. Spray foil with cooking spray and set aside.
  2. In a large mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Add butter and use your hands to rub it into the dry mixture until it is evenly distributed and you are left with coarse crumbs.
  3. Reserving ½ cup of the oat mixture, transfer the remainder of the mix into your prepared baking pan, using your fingers or a spatula to ensure that it is pressed down tightly and evenly.
  4. Spoon jam over the surface, and use a spatula or knife to spread it evenly, making sure to only go within ¼ of the edge to prevent the jam from burning. Sprinkle blueberries on top before sprinkling with the reserved oat mixture, pressing down lightly to ensure that it stays in place.
  5. Bake for 30-40 minutes until the top turns a light golden brown. Remove from oven and allow to fully cool in pan before cutting into bars.
