30-Minute Classic Tomato Soup

- 1 tbsp olive oil
- 3 cloves garlic, diced
- 1 cup diced onion
- 28 oz can diced tomatoes
- 1½ cups chicken broth
- ½ cup milk
- basil
- fresh parmesan
- Heat the olive oil on medium heat and cook the garlic until fragrant (about 45 seconds). Add in the diced onion and cook till translucent.
- Add in the diced tomatoes and chicken broth and let cook for 20 minutes on medium heat, stirring every so often.
- Stir in the milk and cook for another 3-5 minutes.
- Season with salt and pepper. Enjoy!
