One Pan Zesty Burrito Bowl

- 1 tablespoon olive oil
- ½ red onion, diced
- 1 teaspoon minced garlic
- 1½ cups brown rice
- ½ cup chunky salsa
- 1 can black beans, drained
- 1 cup frozen or fresh corn
- 2 tablespoons taco seasoning
- 1 teaspoon chili powder
- 2 cups chicken broth
- 1 ½ cups shredded sharp Cheddar cheese
- In a large skillet, heat olive oil over medium heat. Add in onion and garlic, sautee until soft, about 5 minutes.
- Stir in rice, salsa, beans, corn, taco seasoning, chili powder, and chicken broth. Bring mixture to a boil, then cover and reduce heat to low.
- Simmer for 15-20 minutes, or until rice is fully cooked.
- Remove lid and sprinkle cheese on top. Cover pan until cheese is melted, about 5 minutes.
- Spoon into bowls and top with tomatoes, black olives, sour cream, or avocado, if desired.
