Chicken Marsala Burgers

Ingredients
  • 1 pound ground chicken
  • 2 garlic clove, grated and divided
  • ¼ cup chopped onion
  • ½ small onion, grated
  • ½ cup + 4 tablespoon marsala wine, divided
  • 2 tablespoons parmesan cheese
  • 2 tablespoons italian-style bread crumbs
  • 1 teaspoons salt
  • 2 tablespoons butter
  • 10 ounces sliced cremini mushrooms
  • 3 teaspoon olive oil, divided
  • 2 cups chopped kale
  • 4 ounces fresh mozzarella cheese, cut into 4 slices
  • 4 onion buns
Instructions
  1. In a bowl combine ground chicken, diced onion, grated onion, 1 garlic clove, 2 tablespoons marsala wine, parmesan cheese, breadcrumbs and salt. Do not over mix. Form into four different patties. Set aside.
  2. In large non-stick skillet, melt butter over a medium-high heat. Add mushrooms. Toss to evenly coat in butter. Let mushrooms brown, about 5-6 minutes. Once mushrooms have browned add ½ cup marsala wine. Bring to a boil and then reduce to a simmer until marsala has reduced and the mushrooms have soaked up most of the liquid. Season with salt. Remove from pan.
  3. Add 1 teaspoon olive oil to the same pan, set over a medium heat and add kale and remaining garlic. Cook until kale has softened, about 4-5 minutes. Season with salt and pepper.
  4. Heat a cast-iron skillet to a medium-high heat, add remaining olive oil. Cook burgers, about 2-3 minutes on each side, and until golden brown and cooked through. When the burgers are about 2 minutes from being done, drizzle remaining marsala over and top with mozzarella cheese. Cover and let cook until cheese melts.
  5. Evenly divide kale between three bottom buns, top with chicken patty, followed by mushrooms and top bun.
