Ingredients
  • ⅔ cup old fashioned oats
  • 1 teaspoon baking soda
  • ¼ cup brown sugar, packed
  • ¾ teaspoon ground cinnamon
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 heaping cup peanut butter
  • 2 tablespoons honey
Instructions
  1. Stir together the oats, baking soda, brown sugar, and cinnamon.
  2. In another bowl, lightly beat the egg with a fork. Stir in the vanilla extract, peanut butter and honey until well combined.
  3. Combine the dry and wet ingredients and stir until just combined. The dough will be thick and difficult to stir, but make sure it's well mixed.
  4. Chill the dough at least an hour or overnight in a tightly sealed container.
  5. Preheat the oven to 350 degrees F. Using a cookie scoop, scoop out the dough onto a parchment lined baking sheet.
  6. Bake the cookies for 8-10 minutes or until lightly golden. Slightly under-baking these cookies slightly makes them soft and chewy.
  7. Allow the cookies to completely cool on a cooling sheet.
