1 pound chicken breast, cut into bite-sized pieces
2 tablespoons olive oil, divided
1 head of broccoli, cut into florets
½ pound cremini mushrooms, cut into bite-sized pieces
1 garlic clove, minced
½ cup hoisin sauce
3 tablespoons soy sauce, divided
3 teaspoons sesame oil, divided
2 teaspoons rice vinegar
3 teaspoons sirracha, divided (plus more if you like it a little spicier)
Instructions
Add chicken pieces to a medium bowl. Mix with 2 tablespoons soy sauce, 1 teaspoon sesame oil and 1 teaspoons sirracha. Set aside.
In a small bowl whisk hoisin, remaining soy sauce, sesame oil, rice vinegar and sirracha.
In a large non-stick skillet, heat one tablespoon olive oil over a high heat. Add mushroom and broccoli, stir-fry, 2-3 minutes until mushrooms are brown and broccoli is softened, but still toothsome. Add garlic, cook another minute. Transfer to a plate.
Add the remaining oil to the pan and add chicken. Stir-fry until brown on all sides.
Add the veggies back to the pan along with the sauce. Cook another 2-3 minutes until chicken is cooked through and sauce is slightly thickened. Serve with steamed white or brown rice.
